Snickerdoodle pecan almond butter.

Yes. You heard right. This is the most decadent nut butter and you need to go make it. A little patience is all you need…amd a big enough spoon to devour it. Perfect on it’s own but also amazing on fruit or to top your oatmeal. YUM.

Ingredients:

  • 2 cups raw almonds
  • 2 cups raw pecans
  • 1/4 cup coconut manna (or butter)
  • 2 medjool dates
  • 1 t vanilla
  • 2 t cinnamon
  • generous pinch of sea salt

Method:

Preheat oven to 350 F. On a parchment lined baking sheet, spread almond and pecans in a single layer and roast until fragrant (3-5 mins, toss and another 3 mins). In a food processor (or a vitamix) add nuts, coconut manna, dates, vanilla, cinnamon and salt. process and or blend on high. You’ll need to scrape the sides down from time to time and this will take approx. 20 mins to become a runny butter. Have patience! It will happen! Enjoy!
