Hi friends!

I’m here in my office patiently (read: impatiently) waiting for a giant order to arrive at my house. The studio is finally getting a ton of equipment and I’m super pumped about it. Things are starting to take shape! I can’t wait to show you all the progress as we enter the final stages of construction.

I’ve got a quick recipe for you all for some delicious granola using The Oat Company’s peanut butter cup oatmeal and bars. It’s absolutely ahhhhh-mazing and perfect to add to your favourite smoothie bowls, yogurt or simply enjoy on its own! We LOVE a good granola recipe around here and kamut puffs are the PERFECT addition to get that satisfying granola crunch. Combine that sweet and salty crunch with bite sized peanut butter cup bars? LITERALLY HEAVEN.

Ingredients

Dry:

3 1/2 cups puffed kamut (or puffed wheat)

2 single serve packages of The Oat Company’s peanut butter cup oatmeal

2 The Oat Company’s peanut butter cup bars (chopped into bite sized pieces)

1 T raw cacao (regular cocoa works here too)

1 T chia seeds

1/2 t sea salt

Wet:

1/4 cup smooth natural peanut butter

1/3 cup maple syrup

2 T coconut oil 

2 t vanilla 

Instructions

Preheat oven to 325 F and line a large baking sheet with parchment paper.

In a large bowl, combine kamut, oats, chia seeds and cacao. Stir and combine.

In a small microwave safe bowl, melt your coconut oil in the microwave for approximately 30 seconds. Add peanut butter, maple syrup and vanilla and stir until well combined. Pour the wet mixture over the dry and stir being sure to coat all dry ingredients. Spread your granola onto the parchment lined baking sheet in a thin, uniform layer. Bake for 15 minutes. Flip the granola and bake another 15-20 mins. You want the granola to crispy but not burnt so keep an eye on the edges for signs of burning. Remove tray from heat and allow the granola to cool completely. Once cooled, add your chopped peanut butter bars and toss gently. Store in a mason jar or air tight container. Enjoy!
