Banana Blueberry Walnut Bread.

HI! Happy Monday! What a week it’s been. I’ve been busy cleaning, organizing and staging our house for sale. It’s bittersweet- this has been my home for eleven years and we’ve renovated it like crazy but moving on to new things is so exciting. So many opportunities coming down the line and I am HERE FOR IT. Late last week I tested a banana bread recipe. This one is paleo and refined sugar free! So good! The trick with this bread is to bring the eggs to room temperature and to use an electric mixer. It makes the loaf fluffy and delish.

Life hacks with Les: If you are out of super duper ripe bananas (because that’s what you want for this recipe), you can preheat your oven to 350 and bake your bananas (unpeeled) for 15-20 mins or until they turn completely black. Remove them from the oven, carefully peel and you’re good to go!

Yields 1 loaf

Ingredients:

  • 1/2 cup coconut flour
  • 1 1/4 tsp baking soda
  • 1/2 cream of tartar
  • 1/2 tsp sea salt
  • 1tsp cinnamon
  • 1 tsp vanilla
  • 4 eggs (room temp)
  • 4 bananas (approx 2.5 cups mashed)
  • 1/4 cup coconut oil (melted)
  • 1/2 cup almond butter
  • 1 cup chopped walnuts
  • 1/2 cup blueberries (dust with coconut flour)

Preheat oven to 350. line bread pan (9×5) with a strip of parchment paper.

Combine dry ingredients in a bowl

Ad 4 eggs to another bowl and using an electric mixer, beat for 2 mins. Add vanilla, coconut oil, bananas and almond butter. Add wet ingredient to dry and mix until well incorporated. Fold in 3/4 cup chopped walnuts and blueberries. Pour the mixture into the pan and top with additional 1/4 chopped walnuts and banana cut into long strips lengthwise.

Bake for 50-60 mins or until a toothpick inserted into the centre comes out clean or that the middle of the loaf is firm and springy to the touch. (Mine took approx 55 mins)

Remove from pan and allow to cool on a rack. Serve immediately. YUM.
