Vegan pumpkin oat waffles.

If everything pumpkin is wrong, I don’t wanna be right. Developing recipes is my jam, and a new season and veggies has my brain on overdrive. I’ve been dreaming about the perfect vegan waffle so naturally, I just HAD to add pumpkin. I’m not mad about it, and you shouldn’t be either. Refined sugar and gluten free, these waffles are sure to please. They’re crispy AF and can be made ahead of time and stored in the fridge or freezer. Pop them into the toaster when you’re ready to eat and enjoy! Top these waffles with your faves. It being fall and all, I had to add some fresh sliced figs. You could also sauté some banana, add cacao nibs, a dollop of coconut yog, and some nut butter and maple syrup. These waffles don’t contain any sugar so a little something sweet on top makes them all the more delish and you can choose how much sweetness you want to add. HUNNY. What more could you want?

Ingredients:

  • 1/2 cup oat flour
  • 2 tbsps tapioca flour
  • 2 tbsps almond flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp pumpkin spice
  • pinch of sea salt
  • 1/3 cup unsweetened almond milk
  • 1/2 tsp apple cider vinegar
  • 1 tsp vanilla
  • 2 flax eggs ( 2 tbsps ground flax + 6 tbsps hot water. Let sit for 10 mins)
  • 1/4 cup pumpkin puree
  • 2 tsps coconut oil

Method:

Plug in your waffle maker and preheat on medium. Make 2 flax eggs and set aside to thicken. In a bowl, mix almond milk and apple cider vinegar (vegan buttermilk), vanilla, coconut oil and pumpkin puree. I like to use an electric hand mixer here and slowly add the flax eggs. In another bowl, combine oat, almond and tapioca flour, baking soda and powder, salt and pumpkin spice. Add wet ingredients to dry and mix until well combined. Add 1/4 of mixture to waffle maker and cook for approx 3 minutes or until crispy. Add your favourite toppings and enjoy! This recipe makes approx 4 medium sized waffles.
