Who doesn’t love a good oat bowl? I’ve been eating oats on the reg since I was little. I could honestly survive on a diet solely of oats ( I won’t though I promise Lol). I’ve always loved hot cereals and continue to in my adulthood. Does anyone remember Zappers?!?!? It was a hot cereal in the early 90’s that came with a tube of gooey strawberry or apple sugary goodness. It was amazing (or so I thought back then, anyways). Today my oat bowls are much more wholesome and sophisticated but just as fun to eat.
I’m always looking for interesting ways to incorporate more natural protein (rather than manufactured powders) and veg into my dishes. I snuck in some egg whites and riced cauliflower is ALL the rage right now and so I figured it was a no brainer. Cauliflower is a cruciferous veg that has anti-inflammatory properties. It can help with liver function, fight cancer, help improve blood pressure and is full of phytonutrients and antioxidants. All the good things! The cauli is riced, therefore super tiny and cooks crazy fast, so I thought ‘why not add it to my oats’? Cauliflower is one of those veggies you can kind of hide with other flavours when you want to , which makes it perfect in place of oats (or partially in place of oats). It has a similar consistency to the grain and with a little cinnamon, applesauce and egg whites, you could pull this one off as a whole30 approved meal. Both versions are also gluten free and to make it vegan, just omit the egg white. EVERBODY WINS! YAY!

Final thought…So I know there’s a name for zucchini oats (Zoats) so what do you call cauliflower oats? Coats? OK BYE
Makes enough for 1 hungry human
Ingredients: Whole30 method
3/4 cup unsweetened almond milk
1 cup riced cauliflower (I freeze mine for easy access)
1/4 cup unsweetened apple sauce
1 tsp chia seeds
1tsp cinnamon
1 egg white
1/2 tsp vanilla Optional (if vanilla is your jam….it isn’t mine unless it’s fancy vanilla bean and that stuff is expensive AF)
Method:
In a small saucepan, heat almond milk, add cauliflower rice and cinnamon (and vanilla) over low to medium heat. Do not boil. Cook until tender. Add apple sauce, chia seeds until chia blooms and you achieve desired consistency (Note: everyone likes their oats differently. If you want a thicker oat, add more chia. Soupier oat? Less chia. You get my drift.)
Once you’ve achieved optimal lusciousness, separate an egg white from its yolk and while stirring the oats, gently pour in the white. You need to continuously stir the oats so that the egg white incorporates properly and doesn’t get chunky and gross.
Serve with your fave toppings and be so proud that you ninja’d the heck out of oats and made them grainless and amazing.
Ingredients (avec grains):
2/3 cup riced cauliflower
1/3 cup rolled oats
1 cup unsweetened almond milk
1/4 cup unsweetened applesauce
1 tsp cinnamon
1/2 tsp vanilla (optional)
1/2 tsp chia seeds
1 egg white.
Method:
In a small saucepan heat almond milk and add cauli and cinnamon (and optional vanilla) over low to medium heat until tender. Add oats and cook until desired consistency. Add apple sauce, chia seeds and same method for egg white as in the Whole 30 method.
If you aren’t sold on eliminating oats all together, this method is for you. Honestly, you can’t even tell the difference that there isn’t a full serving of oats in this recipe. So, so good! Enjoy, lovelies!
