Totally chanelling my inner sweet fiend here. I LOVE DONUTS. ESPECIALLY the sprinkle ones. The crunch is what it’s all about! Who doesn’t like donuts? If you don’t, you’re a monster. JK JK JK. Here’s a photo of me in my glee at Dun-Well Doughnuts in Brooklyn, NY this past December. They’re both mine, obvi.

I tend to gravitate towards a paleo diet, so a grain free sweet seemed appropriate. I’ll get into why I like paleo and why I still eat animal products in moderation on another post. These donuts are the perfect amount of moist so that they don’t fall apart and can easily be transferred to their heavenly chocolate bath with ease :). The eggs are important in this recipe, especially the whites. They can be done with a chia or flax egg for my vegans out there, but they’ll be much more dense. Makes 6 donuts
Ingredients:
3/4 cup almond flour
1/2 cup coconut flour
1/2 tsp baking soda
pinch of salt
1 tsp apple cider vinegar
1 tsp vanilla (i use madagascar bourbon)
2 organic free-range eggs with yolks separated
1/4 cup pure maple syrup
1/3 cup melted coconut oil
For the chocolate glaze:
1/2 cup chocolate chips ( I use Enjoy Life )
1 tbsp coconut oil
1/2 tsp vanilla
dye-free sprinkles
Method:
Preheat oven to 350
Mix all dry ingredients in a bowl. Whisk all wet ingredients together (including egg yolks)
Combine wet and dry ingredients with an electric mixer until well incorporated.
In a separate bowl, using an electric mixer, beat egg whites until they form soft peaks. Fold this mixture into donut mixture. Using a reusable piping bag, pipe donut mixture into donut pan (no need to grease as the coconut oil in the recipe will make for easy donut removal
Smooth any edges in the donut mixture to make the donuts evenly textured. Bake for 12 mins (or until toothpick comes out clean)
Remove donuts from pan and let cool on a cooling rack.
For the chocolate Glaze: Using the double boiler method, melt chocolate chips, coconut oil and vanilla and stir until well combined. Keep the mixture on low heat as it begins to harden quickly, and keeping it warm will make dipping easier. dip each donut face down and rest face up on cooling rack and add sprinkles.
