Who says you can’t have tacos during whole30? While you can’t do the traditional tortilla shell or wrap, you can still get all of the flavour while staying compliant with your whole30 rules. WINNING. Taco Tuesday just got a whole lot more interesting! So how does it work? We pile a bowl high with veggies, cauliflower rice, seasoned chicken and a big helping of guacamole. You really can’t go wrong with this one! It’s healthy, satisfying, full of protein and has FLAVA for DAYS.
This am I got up super early, got my workout in and am off to finish painting our second bedroom and grouting a fireplace surround. DIY is my fave. So far this project is looking SO GOOD. I promise to post some before and after pics. At this rate, I’m going to have to start my own home renovation blog too.
We’re flying to Hali and driving to Moncton in a few weeks so the million dollar kitty can get much needed veterinary care. Thinking about a road trip to Maine whilst we wait for princess Witter to get better (fingers crossed she makes it through). Any recommendations on what to do / where to stay?

Ingredients:
for the taco meat:
- 4 boneless skinless chicken breasts
- taco seasoning (see my previous taco post for the seasoning ingredients)
- 2 tbsps avo oil
- 1 red pepper (sliced into strips)
- 1 yellow pepper (sliced into strips)
- 1 medium yellow onion (finely chopped)
- salt and pepper to taste
- 1 large bunch of swiss chard (approximately 5 cups chopped)
for the cauliflower rice:
- 2tbsps avo oil
- 1 bag of cauliflower rice
- 2 jalapeƱos (seeded and minced)
- 1 clove garlic (minced)
- juice of a lime
- salt and pepper to taste
for the guac:
- 1 avocado (smashed)
- 1 loved garlic (minced)
- fresh chopped cilantro to taste
- juice of 1 lime
- glug of good quality EVOO
- a handful of baby tomatoes (diced)
- salt and pepper to taste
Method:
In a large Stasher bag or Ziplock bag, add avo oil and chicken. Close the bag and massage oil all over chicken. Add the seasoning to the bag doing the same until chicken is completely coated. In a large frying pan or skillet, add chicken and cook until internal temp reaches 165 F. In a second skillet, add avo oil, peppers, onion, and salt and pepper. Cook until peppers soften and then add veggies to chicken mixture. In that same second skillet, add swiss chard seasoned with salt and pepper until it has wilted and becomes soft. Cover Swiss chard in a bowl and set aside. Add some more avo oil, cauliflower rice, jalapeƱos, lime juice garlic and salt and pepper to taste, stirring and tossing often until cauliflower is soft.
You can make the guacamole ahead of time by smashing an avocado in a bowl and added garlic salt and pepper, cilantro, lime juice, EVOO and tomatoes. I like to add the tomatoes last and gently fold them into the guac.
Once everything has finished cooking, divide the chicken mixture, cauliflower rice and swiss chard amongst the bowls. Top with plenty of guac and garnish with cilantro scallions and lime wedges. There you have it: a healthy, dairy free, gluten free, whole30 Taco Tuesday right at your fingertips! OLE!
