Burrito stuffed sweet potato.

Ingredients:

  • 2 large sweet potatoes
  • 1/2 cup brown rice (basmati or another brown rice work here)
  • 1 can black beans (rinsed)
  • 1/2 cup diced yellow onion
  • 1/2 cup drained diced tomatoes
  • 3 tbsp tomato paste
  • 4-5 tbsp water
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 clove of garlic (minced)
  • juice of 1 lime
  • salt and pepper to taste

for the guacamole:

  • 1 ripe avocado
  • 1 clove garlic (minced)
  • juice of 1 lime
  • 1 tsp evoo
  • chopped cilantro to taste (2-3 tbsp fresh)
  • salt and pepper to taste

for serving:

  • 1 cup chopped peppers
  • 1 cup chopped cherry tomatoes
  • shredded red cabbage
  • shredded romaine lettuce
  • chopped scallions
  • lime wedges
  • cilantro
  • salsa (i use @nealbrothers mild salsa)

Method:

Preheat oven to 425 F. Line a baking sheet with parchment and prick the potatoes all over with a fork. Place potatoes on baking sheet and bake until tender (approx 40 mins).

Rinse the rice and place it in the instant pot with 1 1/4 cups water. Set the knob to sealing and set to pressure cook for 22 mins. Allow natural release for 10 mins before releasing the rest of the steam. You can also cook the basmati the old fashioned way but the instant pot is pure magic and makes perfect rice every time! In a large pan, sauté onion in water until translucent. Add garlic, cumin, paprika, black beans, tomato paste, diced tomatoes with some water and continue to simmer until liquid is absorbed. Add the rice, lime juice and salt and pepper to taste to the pan. Toss until coated with tomato mixture and set aside. Cover and keep the rice mixture warm.

Make the guacamole. Peel and pit the avocado, mash it with a fork in a small bowl and add the other ingredients until the seasoning is evenly distributed. You want the guac a little chunky, so don’t over mash!

Assemble! Place 1/2 of a baked sweet potato on a plate. top with 1/4 rice and beans, veggies of choice, guacamole, salsa, scallions, cilantro and a lime wedge. ENJOY!
